A couple of weeks ago, we discovered a place in Lecce unlike any other. The moment we stepped through the main gate, it felt as though we had travelled back in time and entered another world, one that seemed wonderfully removed from the city’s lively streets and constant buzz.
We were given a tour of what is today a beautifully restored former Dominican convent dating back to the 15th century. As we wandered through its peaceful cloisters and centuries-old stone corridors, we were struck by an overwhelming sense of calm, as though years of prayer and contemplation still lingered within its warm pietra leccese walls. The elegant columns, Doric capitals and delicate frescoes speak of the building’s rich history, and the thoughtful restoration has transformed it into a place of understated luxury. While walking beneath the portico, we followed a staircase that we assumed led to a basement. Instead, we found ourselves in a remarkable underground crypt, its walls adorned with beautifully preserved frescoes.
Today, Il Chiostro dei Domenicani is much more than a historic building. It regularly hosts weddings, business gatherings and cultural events, making it a place where people, ideas and stories come together. The indoor spaces are equally impressive, with soaring vaulted ceilings, refined interiors and an atmosphere of quiet elegance. Even the subtle fragrance that fills the rooms seems carefully chosen to enhance the sense of tranquillity.

Gimmi, the hotel’s gourmet restaurant, deserves a mention in its own right. Led by Executive Chef Donato Episcopo, the kitchen pays tribute to the culinary traditions of Salento while introducing thoughtful contemporary influences.

Every dish tells a story; one of our favourites was the Tamburello, a playful creation that conceals traditional local bread inside, served with exceptional extra virgin olive oil, oregano from Ugento and tomato-infused salt.

We also enjoyed potato gnocchi with lobster, buttermilk, smoked aubergine and sun-ripened cherry tomatoes, followed by Carnaroli risotto from the San Massimo Reserve, garnished with basil and accompanied by Andria burrata, friggitelli peppers and sea bream ceviche. The carefully curated wine list features outstanding regional, Italian and international labels, and we particularly appreciated the expertise of the sommelier, whose pairings elevated every course.

Dessert was just as memorable: a delicate Pavlova with passion fruit Bavarian cream, beautifully shaped like a rose and served with black mulberry ice cream. Quite frankly: unforgettable.

The boutique hotel offers just eighteen rooms and suites, created from the former monks’ cells and living quarters. Their minimalist, contemporary design sits beautifully alongside the building’s historic character. Our suite featured a private terrace overlooking the cloister, a wonderfully peaceful place to begin and end the day.

Breakfast was equally impressive, offering a generous selection of sweet and savoury options, including the traditional Apulian frisella, ready to be soaked and topped with fresh tomatoes and local olive oil.
